Who knew what sushi was 20 years ago?

Back then, the little slab of raw fish was reserved for the initiated, who worshipped it with cult-like devotion. Today, it has passed into the category of fast food: chic and trendy at first, practically pedestrian now.

Over the same period, our eating habits have undergone major modifications: we now favor lean over fat, and look for healthy, organic zen products that nourish our health too.

Sushi rides the current wave of exoticism, without going overboard. No unheard-of or weird ingre-dients, no overwhelming spices; a refined, colorful yet minimalist aesthetic.

This irruption of the raw into the world of universal foods, of which all the rest (pizza, hamburger, fries, ketchup…) are cooked, requires a confidence-inspiring freshness and hygiene, and is the signature singularity of the latest arrival on the universal-food circuit.

Fish: low in calories, rich in protein, omega-3 and iodine; rice, the mo-del carb, and algae, an incredible source of ma-gne-sium and potas-sium!

The film will tell the story of the birth of this food fad from the 80s and 90s, and of confrontation between the ancient tradi-tion of refinement and the imperatives of modernity: productivity/speed/reducing costs…
